Why we started S&E Meals
We started meal prepping in our home 8 years ago when Eugene lived in Lloydminster working as a pipefitter for 10 days at a time.
Since being diagnosed with type 1 diabetes and kidney disease he had very few choices for food while working 12-hour days.
So, I started sending all his meals up with him. He was able to enjoy meals from home and I could customize them, so his sugars were easy to control.
I meal prepped for myself at the time as I was managing an automotive shop and my hours could be long especially during tire season. I did not enjoy cooking for one every night but eating out even through a drive thru was expensive.
I also struggle with ADD so executive functioning like keeping a house clean and working full time is not a strong suit for me.
Batch cooking 2 days a week kept the kitchen cleaner and it kept me on a better schedule. I was not overwhelmed with dishes every night.
So, for the last 2 years we have gotten to bring S&E meals to Calgary and area. We have learned so much and brought new things to our menu.
I hope we can make other people’s lives a little bit easier in the process.
